Ingredients

Hummus

can (15 or 19 oz) Progresso® cannellini beans, drained, rinsed

tablespoons fresh lemon juice

tablespoon olive oil

teaspoon salt

small clove garlic, chopped

teaspoon ground red pepper (cayenne)

tablespoons chopped fresh basil leaves

Sandwiches

whole wheat pita (pocket) breads (6 inch), cut in half to form pockets

cups loosely packed fresh spinach

very thin slices red onion, cut in half

thin slices tomato, cut in half

Directions

  • 1 In food processor bowl, place all hummus ingredients except basil; process 1 to 2 minutes or until smooth. Add basil; pulse to mix.
  • 2 To assemble sandwiches, spoon about 2 tablespoons hummus into each pita bread half. Place spinach leaves, onion and tomato slices in each.

I made this and the hummus taste just like what you get in good middle eastern places, my only modification is that i added a little avocado to the pitas it was great

In Israel we use chickpeas for making Hummus, we are lucky enough to be able to buy the chickpeas frozen and easy to prepare the dish. could you please advise if the amount of fiber is as much as in the beans? Thanking you for any advice,
