Ingredients

slices bacon, cut into 1/2-inch pieces

lb turkey breast tenderloins, cut crosswise into 1-inch slices

cup barbecue sauce

tablespoons Old El Paso® taco seasoning mix (from 1-oz package)

Old El Paso® flour tortillas (6 or 8 inch), heated

medium ripe avocado, pitted, peeled and mashed

cups shredded lettuce

cup drained roasted red or yellow bell peppers (from 7-oz jar), large pieces cut up

Directions

  • 1 In 12-inch nonstick skillet, cook bacon over medium heat 4 to 6 minutes, stirring occasionally, until almost crisp. Add turkey slices; cook 4 to 6 minutes, stirring occasionally, until brown on all sides.
  • 2 Spray 3- to 4-quart slow cooker with cooking spray. In slow cooker, place bacon and turkey. Top with barbecue sauce and taco seasoning mix; mix well.
  • 3 Cover; cook on Low heat setting 5 to 6 hours.
  • 4 Remove turkey from slow cooker; place on cutting board. Using 2 forks, break up turkey; return to slow cooker. On each tortilla, layer avocado, lettuce, turkey mixture and roasted peppers; roll up.

These were absolutely amazing! There is a lot of prep work to go with it but its worth it. I flaked out and didn't realize how long it was suppose to cook so I just cooked the turkey and bacon on high for 2 hours and it worked out just fine! Kids loved it too!

Yum! I was going to give these just a "fair" review, because there is a lot of prep work for a slow cooker recipe, but the final result got raves from the whole family. We ran out of avocados way before we ran out of meat, so next time I'll buy another one. I put the leftover meat (it made enough for two dinners for our family of four) in the freezer for another time. Also, we subbed tomatoes for the peppers because mama is the only one in the house who likes peppers. Will add to the regular rotation 'round here!
