Apple Cider Dressing

cup frozen (thawed) apple juice concentrate (from 12-oz can)

tablespoons chopped fresh parsley or 2 teaspoons parsley flakes

tablespoons water

tablespoons cider vinegar

tablespoon Dijon mustard

cups torn fresh spinach

cup torn iceberg lettuce

medium zucchini, shredded (1 cup)

Directions

  • 1 In large bowl, mix all dressing ingredients with wire whisk or fork until well blended.
