Ingredients

box (10 oz) Cascadian Farm® frozen organic cut spinach, cooked, cooled and squeezed to drain

cup artichoke hearts (from 14-oz can), drained, finely chopped

medium green onions, chopped (2 tablespoons)

small clove garlic, finely chopped

cups fat-free sour cream

cup freshly grated Parmesan cheese

cup fat-free mayonnaise

teaspoon coarse salt (kosher or sea salt)

teaspoon pepper

Directions

  • 1 In medium bowl, mix all ingredients. Refrigerate 2 hours before serving.
  • 2 Serve with crackers or raw vegetables.

I haven't tried this receipe- it does sound yummy but I'm wondering about the serving size- does anyone know?

We made this with low fat cream cheese instead of the sour cream and mayonnaise. It was a little thicker, but it was so delicious with crackers, carrots, etc. I added a little tarragon too, for a little extra flavor.
