Ingredients

to 2 teaspoons chili powder
1/4
teaspoon salt
1/4
teaspoon pepper

boneless skinless chicken breasts (about 1 1/4 lb)
1
teaspoon canola or soybean oil
1
can (15 oz) Progresso® black beans, drained, rinsed
1
cup Green Giant® Valley Fresh Steamers™ Niblets® frozen corn
1/3
cup Muir Glen® organic salsa (any variety)
Chopped fresh cilantro, if desired

Directions

  • 1 Mix chili powder, salt and pepper. Sprinkle evenly over both sides of chicken.
  • 2 Spray 10-inch skillet with cooking spray. Add oil; heat over medium heat. Cook chicken in oil 8 to 10 minutes, turning once, until juice is clear when center of thickest part is cut (170°F).
  • 3 Stir in beans, corn and salsa. Heat to boiling; reduce heat. Cover; simmer 3 to 5 minutes or until vegetables are hot. Sprinkle with cilantro.

Quick and easy recipe!! My husband loved it!! I also cut the chicken up in large pieces for faster cooking. I didn't have any chili powder and had planned to add cumin (as per another recommendation), so I used Emeril's Southwest seasoning, instead!! Great substitution. I also added more corn, so I needed a bit more liquid, so I used beer! Overall, a great meal that I will certainly make again!!!

My family loved this dish and I did too! It was very easy, fast and healthy. It has 7 weight watcher's points which is good. I will experiment with different salsas next time. Will for sure make again!

Easy, tasty, quick and, yummy meal. I cut the chicken breast into bite size pieces, so each bite was flavor packed. Bite sized pieces allowed the meal to feed double the amount people. Use a mild salsa and or a mild chili powder because this dish can pack a kick. I served this meal with a saffron rice and it was amazing. This recipe will have many repeat performances at my table..
