Ingredients

tablespoon grated lime peel

tablespoons fresh lime juice

tablespoon olive oil
Dash salt, if desired

cups seedless 3/4-inch cubes watermelon
1/2
cup thinly sliced bite-size pieces red onion
1/2
cup sliced and quartered English (seedless) cucumber

can (15.25 oz) Green Giant® whole kernel sweet corn, drained

tablespoons coarsely chopped fresh basil leaves
1/3
cup crumbled fat-free feta cheese

Directions

  • 1 In large serving bowl, mix lime peel, lime juice, oil and salt with whisk until well blended. Add remaining ingredients except feta cheese. Gently toss to coat. Refrigerate about 30 minutes or until chilled.
  • 2 Gently stir in feta cheese just before serving.

Need a more mild onion? Just place the cut-up onions in a small bowl with ice water and let stand for 30 minutes before adding.

This is SO good! Delicious and refreshing! I didn't have fresh basil, so I put about a T of dried into the dressing instead. I will make this again and again!!

Absolutely UNBELIEVABLE! The combinations of flavors was amazing! I happened to have fresh cooked corn on the cob so I used that -- really 'kicked it up' a notch!
