Ingredients

packages (9 ounces each) refrigerated light 4-cheese-filled ravioli
1
package (8 ounces) sliced mushrooms (3 cups)
1
large onion, coarsely chopped (1 cup)
2
cloves garlic, finely chopped
1
teaspoon dried oregano

cans (15 ounces each) no-salt added Muir Glen® tomato sauce
1/2
cup fat-free half-and-half

tablespoons grated Parmesan cheese
1/4
cup chopped fresh parsley

Directions

  • 1 Cook and drain ravioli as directed on package; keep warm.
  • 2 Spray same saucepan with cooking spray; heat over medium heat. Cook mushrooms, onion, garlic and oregano in saucepan about 5 minutes, stirring frequently, until onion is crisp-tender.
  • 3 Stir in tomato sauce and half-and-half. Heat to boiling; reduce heat to low. Stir in ravioli, cheese and parsley.

This was really good! Even my super picky 3 year old ate it all and my 7 year old asked for more. Since I am the only one in the house to likes mushrooms... I took those out and added in some turkey italian sausage. I also bought the whole wheat ravioli. We will definitely have this one again!
