4
medium zucchini or yellow summer squash, sliced (about 4 cups)
1
medium red bell pepper, chopped (1 cup)
1

1
clove garlic, finely chopped
1/4

1
can (14 oz) artichoke hearts, drained
1/3
cup shredded Parmesan cheese

Directions

  • 1 In 2-quart saucepan, beat cornmeal and cold water with wire whisk. Stir in boiling water and salt. Cook over medium-high heat, stirring constantly, until mixture thickens and boils; reduce heat. Cover; simmer 10 minutes, stirring occasionally. Keep polenta warm.
  • 2 In 10-inch nonstick skillet, heat oil over medium-high heat. Add zucchini, bell pepper, onion and garlic; cook about 5 minutes, stirring occasionally, until vegetables are crisp-tender.

The only good thing about this recipe are the veggies....alone, without the polenta (cornmeal). Cornmeal is absolutely tasteless and this recipe did not give it any flavour.
