Ingredients

cup chopped red onion

tablespoons honey

tablespoon olive oil

teaspoon grated lime peel

tablespoons lime juice

teaspoon freshly ground black pepper

cups cut-up ripe cantaloupe

ripe plums, thinly sliced

bunch watercress, tough stems trimmed
2
tablespoons crumbled goat cheese or feta cheese
2
tablespoons sliced almonds or pumpkin seeds

Directions

  • 1 In salad bowl, stir together onion, honey, oil, lime peel, lime juice, pepper and salt with fork until combined.
  • 2 Gently stir in cantaloupe, plums, watercress, cheese and almonds until coated with honey mixture. Serve immediately.

I joined a fruit and veggie co-op in my area, and when I received a cantaloupe I looked at it wondering what to do with it since I do not like them. I decided to see if I could find a recipe for it and came across this salad. I figured what the heck and gave it a try. While melon has not become my new favorite fruit, this recipe definitely makes it taste much better. A friend who likes cantaloupe really enjoyed this as well.
