Ingredients

teaspoons packed brown sugar

teaspoons grated lime peel

teaspoon ground red pepper (cayenne)

boneless skinless chicken breasts (about 1 1/4 lb)

teaspoons olive or canola oil

Directions

  • 1 Heat gas or charcoal grill. In small bowl, mix chili powder, brown sugar, lime peel, salt, garlic powder and ground red pepper. Rub both sides of chicken with oil, then with spice mixture.
  • 2 Place chicken on grill over medium heat. Cover grill; cook 10 to 15 minutes, turning once or twice, until juice of chicken is clear when center of thickest part is cut (170°F).

Expert Tips

Refrigerating the "rubbed" chicken 20 to 30 minutes before grilling really enhances the flavor.

You can bake the chicken. Place the rubbed chicken in a foil-lined shallow baking pan and bake in a 375°F oven for 25 to 30 minutes.

This was simple and tasty! My 6-year-old said it was too spicy, but still ate it. My husband and I loved it with no complaints.

I baked the chicken breasts at 375 til they reached 165 internal temp and it turned out SO flavorful and juicy and tender. I did refrigerate the rubbed chicken for at least 20 minutes before baking. It was a win, and everyone (even my anti-"health food" sister) enjoyed it! I paired it with a cilantro lime rice (the skinny version of Chipotle's famous cilantro lime rice) and fresh lemon-herb green beans (boiled the green beans for 7 min then tossed with lemon juice, oregano and basil). Yum!
