Ingredients

cups frozen potatoes O'Brien with onions and peppers (from 28-oz bag), thawed
1 1/2
cups shredded reduced-fat Cheddar cheese (6 oz)

slices fully cooked turkey bacon, chopped

cup Bisquick Heart Smart® mix
3
cups fat-free (skim) milk
1
cup fat-free egg product
1/2
teaspoon pepper
Italian (flat-leaf) parsley, if desired

Directions

  • 1 Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In medium bowl, mix potatoes, 1 cup of the cheese and the bacon. Spread in baking dish.
  • 2 In same bowl, stir Bisquick mix, milk, egg product and pepper until blended. Pour over potato mixture. Sprinkle with remaining 1/2 cup cheese.
  • 3 Bake 30 to 35 minutes or until light golden brown around edges. Let stand 10 minutes before serving. Garnish with Italian parsley.

O'Brien potatoes are diced potatoes, with chopped onions and pimientos or red or green bell peppers that are fried until they are golden and crispy. Frozen O'Brien potatoes have not been fried.

Using turkey bacon and reduced-fat cheese helps keep the fat and calories low--your kids will never know the difference.

I made a few minor substitutions. I used 1 can of sliced potatoes, soy milk and soy cheese. I did not have bacon so I cut up some slices of jalapeno chicken breast I made the night before. In addition to the onion I finely sliced 1/2 a jalapeno pepper and then added the can potato (rinsed and cut up real fine) to a skillet with 1tsp olive oil. I sprinkled chili powder and red pepper on the skillet mix and dumped that in the bottom of the dish. Very filling and a great way to use up some leftovers!
