Ingredients

Salad

box (14.5 oz) uncooked multigrain or whole grain rotini or rotelle pasta

cups small fresh broccoli florets

cups cubed cooked turkey breast (1/2 lb)

cup dried cherries

small onion, chopped (1/2 cup)

medium stalk celery, chopped (1/2 cup)

cup unblanched whole almonds, toasted*

Dressing

cups Yoplait® Fat Free plain yogurt (from 2-lb container)

cup reduced-fat mayonnaise

tablespoons Dijon mustard

tablespoon champagne vinegar, white wine vinegar or cider vinegar

cup powdered sugar

teaspoon pepper

teaspoon poppy seed

Directions

  • 1 Cook pasta as directed on package omitting salt and adding broccoli for last 2 minutes of cooking; drain. Rinse with cold water to cool; drain.
  • 2 In large bowl, mix pasta, broccoli and all remaining salad ingredients except almonds.
  • 3 In medium bowl, beat dressing ingredients with wire whisk until smooth. Add to pasta mixture; toss to mix well. Cover; refrigerate at least 2 hours to blend flavors. Before serving, stir in almonds.

*To toast almonds, heat oven to 350°F. Spread almonds in ungreased shallow pan. Bake uncovered 6 to 10 minutes, stirring occasionally, until light brown.

Was excited to see the alternative idea...but I do not keep all of the items on hand and would probably not use them often..dried cherries,powdered sugar? Toasting almonds? Can it be simplified as well? How would it taste without those? The sugar and cherries really threw me. Does it have to be sweet? I am going to try it without those.

I used Yoplait Greek Yogurt, otherwise followed recipe. It came out dry after sitting in the fridge for a couple hours, maybe due to greek yogurt. If I make it again, I will use fewer noodles and more broccoli.

This was the first recipe I've tried from this website and it was a total winner. I actually took it to work and everyone loved it. It was easy to make and super healthy. Also, if you want to tweak it a little, honey mustard instead of dijon gives it the perfect blend of sweet and salty and mixing cranberry raisins with the cherry raisins gives it two different fruity tastes blended into one. I have to say this is a great dish that everyone can enjoy!
