Ingredients

package (9 ounces) refrigerated cheese-filled tortellini
1
box (9 oz) broccoli cuts (or other frozen vegetable)
2 1/2
cups quartered cherry tomatoes
1/4
cup chopped fresh basil leaves or parsley
1
tablespoon grated Parmesan or Romano cheese
1 1/2
teaspoons olive or canola oil
4
medium green onions, sliced (1/4 cup)
2
medium cloves garlic, finely chopped
Salt and freshly ground pepper to taste, if desired
2
reduced carb flax, oat bran and whole wheat lavash bread, cut in half

Directions

  • 1 Cook tortellini as directed on package, adding broccoli for the last 2 to 3 minutes of cook time; drain thoroughly.
  • 2 Add remaining ingredients except salt and pepper; toss. Sprinkle with salt and pepper. Serve with lavash bread.

Made it with the chicken tortellini and veggie medley of broccoli, cauliflower, and carrots. Also added sweet yellow peppers. Delish! My meat loving boys said it was a "do again" meal.

This was my first recipe from this site. I added my own thing to it, but it was delicious! I used Sargento cheese, Burtoli tortellini's chicken. I also used diced tomotoes from a can, and broccoli steamers. I lastly added some turkey slices. It was sooo good!

Love this recipe! I go a bit heavier on the veggies since my kids don't mind. I love using fresh basil and veggies. I used spinach tortellini which went great with the Parmesan cheese. I definitely suggest trying this at least once!
