Ingredients

oz (half of 8-oz package) 1/3-less-fat cream cheese (Neufchâtel), softened

cup reduced-fat ricotta cheese

cup powdered sugar

container (6 oz) Yoplait® Original 99% Fat Free French vanilla yogurt

cup cold brewed espresso or strong coffee

tablespoons coffee-flavored liqueur, cold brewed espresso or strong coffee

package (3 oz) soft ladyfingers, cut into 1/2-inch cubes
1
oz semisweet baking chocolate, grated (1/4 cup)

Directions

  • 1 In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Beat in ricotta cheese, powdered sugar and vanilla until creamy. Beat in yogurt until well blended. In small bowl, mix espresso and liqueur.
  • 2 In 8 small parfait glasses or clear drinking glasses, layer half of the ladyfingers, half of the espresso mixture and half of the cheese mixture. Sprinkle each with about 3/4 teaspoon grated chocolate. Repeat layers.
  • 3 Cover; refrigerate at least 1 hour to blend flavors but no longer than 4 hours. Store covered in refrigerator.

I doctored this a bit and it was lovely! I replaced the cream cheese with lebni* which is available at any middle eastern market, (google your city name and "middle eastern market"). I used homemade stevia powdered sugar** and Safeway's O Organics fat free Vanilla because it tastes like crème fraîche.. I highly encourage using cubes of angel cake instead of lady fingers as the recipe suggests. It got really quiet at the table after I served it. :-D

*Lebni is strained keifer so its basically yogurt but it has the exact consistency of cream cheese and just about the same flavor; lebni has a bit of a lighter flavor with less bite. That makes it perfect for recipes like this. Bonus: its full of probiotics.

**Using Stevia as a Substitute:

1. Take 2 packets of stevia with 1 cup of arrowroot or potato starch and process them in a food processor.
2. Alternatively, you can process 4 packets of stevia with 1 cup of arrowroot or potato starch and 1 cup of whey protein powder.
3. Finally, you can process 4 packets of stevia with 1 cup of arrowroot or potato starch and 1 cup of powdered milk.

Ask someone at your market where to find the starches. Sometimes they're in baking, sometimes they're in health food... save yourself half an hour and ask.
