Ingredients

cup granulated sugar

cup packed brown sugar

cup peanut butter

cup no-trans-fat 68% vegetable oil spread stick, softened

tablespoons honey

cups Gold Medal® whole wheat flour

teaspoon baking soda
1/2
teaspoon baking powder
1/4
teaspoon salt
Additional granulated sugar

Directions

  • 1 Heat oven to 375ºF. In large bowl, beat 1/2 cup granulated sugar, the brown sugar, peanut butter and vegetable oil spread with electric mixer on low speed until well mixed. Beat in honey and egg until well blended. Beat in remaining ingredients until dough forms.
  • 2 Shape dough into 1 1/4-inch balls. Place balls about 3 inches apart on ungreased cookie sheets. Flatten in crisscross pattern with fork dipped in additional granulated sugar.
  • 3 Bake 7 to 9 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets to cooling rack. Cool completely, about 15 minutes.

these are good, but I have an even better recipe for Peanut butter cookies, and they're amazing! Only 36 calories per cookie:

1 Cup Peanut Butter
1 Cup Sugar
1 TSP Baking Soda
1 egg

Bake for 10 min on 350 degrees. Make about 12-16 cookies. SO GOOD!

I made these cookies exactly the way the recipe called for. I loved them and so did my grandkids and daughter. The cookies are soft and very chewy, we couldn't tell that they were made with whole wheat flour. I will be making them again.

I am all for peanut butter cookies. I am also all for making food healthier and I've substituted whole wheat for portions of white flour and reduced sugar amounts etc. for decades. What I don't get is why you want to force odd fat products on folks as healthy. Why not just eat a fewer cookies as a reduction in fat? Folks pushed "margarine" for years as a healthier choice and it turns out the trans fat is terrible for one's health. Why would this stuff any better? At least if it is butter, I know what I am getting.
