This was really easy to make and quite tasty. Even better is that my vegetarian friend loved it.

This bean salad is fantastic. All my roommates tried it and loved it. I made it again for a 4th of July gathering and it went over well there too! Multiple people asked for the recipe! So good, so healthy. Will definitely be making this again.

Great summer salad! I made it ahead of time to serve with the Porkchops with Southwest Rub recipe from this website and it was a great, filling and healthy side dish. I plan on using the rest to top some baked nachos later!
