Ingredients

Salad

cups torn mixed salad greens, such as Italian blend

cups small broccoli florets

Dressing

Directions

  • 1 Place salad greens in large salad bowl. In order given, layer remaining salad ingredients over greens.
  • 2 In small bowl, mix all dressing ingredients except cheese until well blended. Spoon dressing over salad; sprinkle with cheese. Toss salad to coat.

I would imagine that you could replace 3 tabel spoons of Bacos or other soy based bacon bits for the real thing which would reduce the fat content even more.

Excellent recipe, I used Lite Miracle Whip instead of the mayo and also decreased the amount of dressing. I also used fresh peas, carrots and broccoli and added some cauliflower florets as well. It was hit.

I did not put the full amount of dressing on this salad. Using the full amount would have seriously drowned the salad. Of course, I like a light amount of dressing anyways, real dressing fans may want the full amount. The salad itself is a tasty mix of vegtables made special by the cheese and bacon. I used turkey bacon for a healthier choice. My children were not too impressed. They didn't like the dressing.
