Ingredients

lb uncooked fettuccine

cups whole milk

tablespoon Gold Medal® all-purpose flour

teaspoon salt
Dash freshly ground black pepper
Dash ground red pepper (cayenne)

tablespoons butter
2
teaspoons finely chopped garlic
2
oz 1/3-less-fat cream cheese (Neufchâtel)

cup grated Parmesan or Romano cheese

tablespoons chopped fresh parsley

Directions

  • 1 Cook fettuccine as directed on package, omitting salt. Drain; return to saucepan. Cover to keep warm; set aside.
  • 2 Meanwhile, in medium bowl, stir milk, flour, salt, black pepper and red pepper with wire whisk until smooth. In 2-quart saucepan, melt butter over medium-low heat. Add garlic; cook 1 minute, stirring constantly (do not burn). With wire whisk, stir milk mixture into butter mixture in saucepan. Cook and stir over medium heat 6 to 8 minutes or until mixture thickens and boils.
  • 3 Stir in cream cheese until melted. Stir in Parmesan cheese until melted. Pour over fettuccine; toss to coat. Sprinkle with parsley.

This turned out wonderful and as it set, the sauce thickened. I prepared it with families of a child care program and the adults and children as well as staff rally enjoyed it. We added sautéed chicken breasts and steamed broccoli florets which made it a colorful balanced meal!

I've made this recipe a few times now (it's my husband's favorite dish). I make a couple changes to fit what we like - I use 2 cups of low fat milk instead of whole milk (it's the only kind we have in the house) and 2 Tbsp of flour (to help thicken the sauce with less fat in the milk), I used 4 cloves of garlic instead of 2 (we LOVE garlic). Sometimes we add grilled boneless chicken or broccoli to the sauce. We love it!

This was delicious! I've made it a few times and added a bit more garlic (how can you go wrong with more garlic?!!) and it was excellent each time. It is not a heavy sauce as my acid reflux would hate that! So this is a great way for me to enjoy my favorite italian dish on the healthier side!
