Ingredients

package (8 oz) 1/3-less-fat cream cheese (Neufchâtel), softened
1/2
cup fat-free ranch dressing
1/3
cup buffalo wing sauce

tablespoons water

cups shredded cooked chicken breast

cup shredded reduced-fat Colby-Monterey Jack cheese blend or reduced-fat Cheddar cheese (4 oz)

tablespoons chopped green onions (2 medium)
Whole grain crackers or celery sticks, if desired

Directions

  • 1 Heat oven to 350°F. In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Beat in dressing, buffalo wing sauce and water until blended. Stir in chicken and cheese. Spread in ungreased 1-quart baking dish or 9-inch pie plate; cover with foil.
  • 2 Bake 30 to 35 minutes or until hot and bubbly. Stir; top with onions. Serve hot with crackers or celery sticks.

Just thought of something! Someone should try it with a little sour cream to give it a nice tangy taste and let me know how it comes out. If you reallly want to add some kick add a few bits of jalapeno peppers!

I can't wait to try this myself! I love foods with a little kick to it. This may be a good snacker for a retreat I'm going to with a few ladies from my church.

As a lover of all things buffalo chicken, I was skepitical that all the low fat ingredients would be tasty... It really was. The recipie was quick and easy to make, and something you can even make ahead, and just pop in the oven to cook when you want it. I will make this again!

I made the dip for my boyfriends birthday party and well, lets just say EVERYONE loved it!! Goes great with Scoops chips and Wheat Thins!! Now my EVERYONE makes requests to have me make some. My kids, father and boyfriend all fight over the batch I make. I put it in a crock pot to keep warm. :)
