Jicama is a crunchy root vegetable with a sweet, nutty flavor that’s popular in Mexican cuisine. Its pretty ivory color does not become discolored, which makes it a natural to use in salads like this one.

Ingredients

Dressing

tablespoons plain low-fat yogurt

tablespoon white wine vinegar

tablespoon agave nectar

teaspoon salt

teaspoon ground coriander

teaspoon pepper

Salad

lb jicama, peeled, cut into 3x1/4-inch julienne strips
1/2
English (seedless) cucumber, cut into 3x1/4-inch julienne strips (about 1 cup)

oranges, peeled, sectioned
1/2
bunch fresh cilantro, chopped (1/2 cup)

Directions

  • 1 In large bowl, beat Dressing ingredients with whisk.
  • 2 Add jicama, cucumber and oranges; toss to coat. Let stand at room temperature about 30 minutes to blend flavors.
  • 3 Top with cilantro.
