Ingredients

cups Oatmeal Crisp® Almond cereal
1/3
cup sliced almonds

tablespoon chopped crystallized ginger
1
bag (7 oz) dried tropical three-fruit mix
1/4
cup packed brown sugar
1/2
teaspoon ground ginger

tablespoons no-trans-fat vegetable oil spread
1/4
cup coconut

Directions

  • 1 Heat oven to 300°F. In large bowl, mix cereal, almonds, crystallized ginger and dried fruit.
  • 2 In 1-quart saucepan, heat brown sugar, ground ginger and vegetable oil spread over low heat, stirring occasionally, until spread is melted; stir in coconut. Pour sugar mixture over cereal mixture; toss until evenly coated. Spread in ungreased 15x10x1-inch pan.
  • 3 Bake 15 minutes, stirring twice. Cool 5 minutes. Store in tightly covered container.

My family absolutely loved this healthy alternative to trail mix. I wanted a little more variety so I substituted two cups of the cereal for 1 cup of bran Chex and 1 cup of Fiber One. I also used Splenda brown sugar and added a few walnuts. I can't wait until Spring Break is over so I can take it to work to the teacher's lounge.
