Ingredients

box (15.3 oz) Fiber One™ banana nut muffin mix
1/2
cup water
2
tablespoons vegetable oil
1/2
cup fat-free egg product or 2 eggs
1
cup fresh blueberries
1
tablespoon decorator sugar crystals

Directions

  • 1 Heat oven to 350°F. Spray bottom only of 9x5-inch loaf pan with cooking spray.
  • 2 In medium bowl, stir muffin mix, water, oil and egg product just until blended (batter may be lumpy). Gently stir in blueberries. Spread in pan. Sprinkle sugar crystals over batter.
  • 3 Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes. Remove from pan to cooling rack. Cool completely, about 1 hour. Wrap tightly and store in refrigerator.

So easy, and I love the fresh blueberries! I used one Tbsp of oil instead of two and it was still moist.
