Ingredients

cup Gold Medal® all-purpose flour
3/4
cup sugar
3/4
cup fat-free (skim) milk

teaspoons baking powder
1/4
teaspoon salt

tablespoon butter, melted
2
bags (8 oz each) Cascadian Farm® frozen organic blueberries
2
teaspoons finely chopped crystallized ginger, if desired

Directions

  • 1 Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In large bowl, stir flour, sugar, milk, baking powder and salt until well blended. Stir in melted butter. Pour into baking dish.
  • 2 Pour frozen blueberries over batter; sprinkle with ginger.
  • 3 Bake uncovered 1 hour to 1 hour 5 minutes or until edges are golden brown and center is set. Let stand 15 minutes before serving. Serve warm.

Oh wow this was so delicious. Super easy to make, I used fresh blueberries - I used more than it calls for. That was the only change I made. I couldn't really taste the ginger. I might substite the ginger for fresh lemon next time. I will certainly be making this again. Beautiful with a scoop of vanilla ice cream

Loved this. I made it late at night for a small suprise when my mom got home and she's scraping the plate for the last bite telling me "it was horrible" ;). We love cobbler and this one was super simple and easy...and delicious.
