Blogger Jessica Walker from Little Miss Bossy shares a recipe using Yoplait® Greek yogurt for a delicious chicken marinade.

Ingredients

cup Yoplait® Greek coconut yogurt (from 6-oz container)
1 1/2
teaspoons curry powder
1/2
teaspoon grated gingerroot
1
medium clove garlic, finely chopped (1/2 teaspoon)

lb boneless skinless chicken breasts
10
bamboo skewers

Directions

  • 1 To make marinade, stir together yogurt, curry powder, gingerroot and garlic in shallow bowl.
  • 2 Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick. Cut each chicken breast in half lengthwise.
  • 3 Place chicken strips in yogurt marinade; gently toss until each is well coated. Let chicken stand at room temperature at least 2 hours. Meanwhile, soak skewers in water at least 30 minutes to prevent burning.
  • 4 Set oven control to broil. Thread chicken strips lengthwise onto skewers through middle of each chicken piece.
  • 5 Broil 14 to 16 minutes, turning once halfway through broiling, until chicken is no longer pink in center. If desired, serve with your favorite dipping sauce.
