This skillet dinner has it all - vegetables, tomatoes, chick peas and beans combined in an easy chili that’s ready in 30 minutes.

Ingredients

medium potato, cubed (2 cups)

medium onion, chopped (1/2 cup)

small yellow bell pepper, chopped (1/2 cup)

tablespoon chili powder

teaspoon ground cumin

cans (14.5 oz each) no-salt-added diced tomatoes, undrained

can (15 oz) chick peas (garbanzo beans), drained, rinsed
1
can (15 oz) black beans, drained, rinsed
1
can (8 oz) tomato sauce
1 1/2
cups water

medium zucchini, cubed (1 cup)

Directions

  • 1 In 4-quart Dutch oven, place all ingredients except zucchini. Heat to boiling, stirring occasionally; reduce heat. Cover; simmer 13 minutes.
  • 2 Stir in zucchini. Cover; simmer 5 to 7 minutes longer or until zucchini is tender.
