Top apples with ice cream and rum-caramel sauce to make a delicious fruit dessert that's ready in just 15 minutes!

Ingredients

small baking apples

tablespoon water
1/2
cup vanilla reduced-fat ice cream
1
tablespoon caramel topping
2
teaspoons rum or apple cider
Dash ground cinnamon

Directions

  • 1 Cut thin slice off bottom and top of each apple. Using paring knife or apple corer, remove core from each apple.
  • 2 In 8- or 9-inch square microwavable dish, place apples upright. Pour 1 tablespoon water over apples. Cover with microwavable plastic wrap, folding back one edge or corner 1/4 inch to vent steam. Microwave on High 8 to 10 minutes or until apples are tender.
  • 3 Place apples in individual serving bowls; reserve 1 teaspoon cooking liquid. Cut each apple in half. For each serving, spoon 1/4 cup ice cream between apple halves. In small bowl, stir caramel topping, 1 teaspoon cooking liquid and the rum; pour over apples. Sprinkle with cinnamon.
