Ingredients

2 1/4
cups Progresso® reduced-sodium chicken broth (from 32-oz carton)
1
green onion, cut into about 1-inch pieces
1
small clove garlic
1
tablespoon lemon juice
2
medium avocados, pitted, peeled and cut up
1
cup Yoplait® Fat Free plain yogurt (from 2-lb container)
1
package (6 oz) frozen crabmeat, thawed, drained and cartilage removed

Directions

  • 1 In 2-quart saucepan, heat broth, onion and garlic to boiling. Pour hot mixture into food processor or blender. Add lemon juice and avocados. Process about 30 seconds or until smooth.
  • 2 Pour blended mixture back into saucepan. Stir in yogurt and crabmeat. Heat, stirring constantly, just until hot.

I just tried this soup today. Even though the taste is very mild. I really did enjoy it. I did add cilantro because I feel the two go very well together. The soup is also very filling with a side of Orange Roughy baked.

the soup was very good, but it would be better with some type of garnish. i used plain greek yogurt, and the consistancy was perfect. very easy to make

I am not a fan of avocados, but wanted to try this recipe anyways. The texture is great, but the flavor is dismal. I did add some red pepper and garlic salt; it did nothing for me, but some of my friends that like avocados thought it was ok. Good idea, but not the soup for me.
