I made this for dinner, and even though risotto needs constant attention when cooking, the end result is always something to look forward to. I made a similar risotto dish that was very rich, so I appreciate the healthier version. Next time I may top the risotto with fresh asparagus. The pine nuts added great flavor.

The end product is fantastic. Though be aware - if you use short grain brown rice and are at a high altitude, you will be using 7+ cups of liquid over the course of nearly an hour!

I just tried this tonight. This is one of the best recipes I have ever had! So creamy, filling, and rich with the Parmesan cheese. The asparagus gives it a nice flavor, and the pine nuts add in a lovely little crunch. This is a keeper in my book!
