Ingredients

cups Cheerios® cereal

cups Gold Medal® all-purpose flour

cup packed brown sugar

teaspoon ground cinnamon

teaspoon baking powder

teaspoon baking soda

cup applesauce

cup fat-free (skim) milk

tablespoons vegetable oil

egg or 1/4 cup fat-free egg product

cup raisins, if desired

Directions

  • 1 Heat oven to 400°F. Spray bottoms only of 12 regular-size muffin cups with cooking spray.
  • 2 Crush cereal. In large bowl, stir together cereal, flour, brown sugar, cinnamon, baking powder and baking soda. Stir in remaining ingredients just until moistened. Divide batter evenly among muffin cups.
  • 3 Bake 18 to 22 minutes or until golden brown.

I made the applesauce muffins and they didn't turn out well for me. I am at high altitude and cooked them for the minimum 18 minutes, but they still came out dry. Any suggestions? Also, any other fun additives besides raisins and apples?

Thanks for this recipe! Great healthy muffin and family enjoyed them. Made them with raisins and will try them with chopped apples next time. Can't wait!

I made these early this week without the raisins. The muffin had a light flavor but would have been much better with the raisins. Will definitely make again...this time with the raisins!
