Expert Tips

We like the combination of chicken thighs and breasts in this recipe, but you can choose to use all chicken thighs instead.

Groundnut is another name for peanut, which is a member of the legume (bean) family.

WOW! This is fabulous - a HUGE hit with the whole family. Next morning my husband said that this dish needs to be a seasonal regular! We served it with a scoop of rice. Lots left over for lunch - which is my favorite thing with stews and soups. I didn't have the ingredients in time to cook it in the crock pot that morning, so I layer it in a large soup pot, brought it to a gentle boil and cooked it on a medium low heat for 30 - 40 mins. Be sure to stir a few times. ENJOY!
